Time Out Market welcomes Montréal Climats, a new local brasserie

It's official: Time Out Montréal Market officially welcomes Climats, a contemporary new brasserie featuring local flavors designed and built from A to Z for the market—the best of the city under one roof.

Climats is hosted by renowned chef Jean-Sébastien Giguere, who is at the helm of Le Coureur des Bois bistro, Cabane du Coureur and H3 restaurant (located in downtown Montreal).

Professional travel has taken him to some of Canada's most popular restaurants, including Toke! and La Cabane au Pied de Cochon, the chef offers a contemporary menu at the market that is simultaneously fun, comforting and affordable. Breathing through local ingredients, expect them to appear traditionally, sometimes with a completely unique twist.

“I wanted to incorporate classics like a large giddy or fish and chips, but in a next-level, unique way,” explains Chef Giger.

The gedille (think lobster roll if it's your first time) is served on an oversized hot dog bun made to order by an artisan bakery. le Tamelier. And fish is made no less than Gaspe halibut.

Other dishes with unique flavors also appear on the menu, such as roasted salmon with cream of corn and seasonal vegetables, marinière and potatoes, maple grilled chicken burrito and beef carpaccio with truffle oil, egg yolk jam. and parmesan.
