Charcut will open a new location in the University District this spring

One of Calgary's most popular restaurants is set to open its second location this year.

Charcut Roast House, a spot known for its meat dishes and handmade charcuterie, is set to open a new outpost in Calgary's thriving University District this spring.

Owned by local chefs Connie DeSouza and John Jackson, Charcut has made it onto lists of Canada's best restaurants since opening its Center Street S location in 2010.

Now, in an exciting move, Charcut is spreading with a new twist.

The new 2,800-square-foot space will be on the main floor of the Alt Hotel in the University District and will feature an open kitchen and 80-seat main dining room, complete with 12-foot glass windows to the salumeria. can see the dry aging process.

With an island bar, seating and a cozy fireplace, the lounge is the perfect place to enjoy a cocktail, and in the summer months, diners can enjoy the 60-seat patio.

Charcut University District will also feature a 16-seat private dining room called The Butcherina, with views of the chef's butchery.

The food offerings at the Sharkut University District will be slightly different from its original location, although the menu has not yet been revealed. What we do know is that there will be a takeout window for Connie & John's Pizza, which sells New York and Detroit-style pizzas by the pie.
